In a medium bowl, whisk together flour, yeast and salt. Add water and beer (or all water instead of beer). Mix together with a wooden spoon or dough hook. Spray plastic wrap with cooking oil and place over bowl. Let dough sit at room temperature for 8 hours. The longer the rise, the more dense the bread. May let it rise as long as 18 hours.
Flour surface with 2 Tablespoons of flour and pour dough on it. Fold it over a couple of times. Sprinkle top with about a Tablespoon of flour.
Roll off a sheet of plastic wrap (2 feet long). Lay it on counter and spray entire plastic with cooking oil. Sprinkle middle of plastic with 2 Tablespoons flour. Gently place dough on top of plastic and quickly fold sides over itself, one side at a time. Or place on brown parchment paper. (Bake on parchment paper if desired.)
Preheat oven to 450°. (If using a cast iron pot, put in oven with the lid and let it get hot while dough rises). Let dough rise for at least 30 minutes.
Gently transfer dough to oven and drop it from the plastic, upside down onto a pizza stone, tiles, oiled baking sheet or cast iron pot on the lowest rack in the oven. (If using a pot, cover with lid and bake 35-45 minutes or until golden and remove lid halfway through). Bake at 450° for about 20-25 minutes or until golden brown. Serve warm or cool on rack.
