That’s right these are made with carrots and to top it off orange icing… AMAZING!
We will never forget the first time we ever had these cookies, we didn’t understand what kind they were at first but knew they tasted amazing!! When the lady that made them for me exclaimed that they were carrot cookies we couldn’t believe it! This cookies are so delicious you are going to be addicted. If they turn out a little flat make sure to add more flour! You wont believe how good the orange icing is too!! Yum Yum Yum!!
Put the carrots in a medium saucepan with water to cover and bring to a boil. Decrease the heat and simmer until they are soft, about 15 minutes. Drain and mash the carrots with a fork to make 1 cup mash. Set aside.
Preheat the oven to 325 degrees. Lightly grease a cookie sheet.
Mix the butter, sugar, and egg in a medium bowl of an electric mixer. Beat until light, about 1 minute.
Sift the flour, baking powder, and salt onto a square of wax paper (or mix in a bowl). Add to the creamed mixture and combine. Mix in the vanilla and carrots.
Drop the dough by teaspoonfuls onto the prepared coke sheet. Bake for 10 minutes, taking care not to over bake.
Meanwhile, quickly make the icing. Place the cookies on aluminum foil and ice them while they are still hot. (You can also put the icing on when the cookies are cool, like in the picture above.)
Orange Icing
Sift the powdered sugar into an electric mixer bowl.
Add the butter, juice of 1 orange, and salt. Mix until smooth, adding more orange juice as needed for spreading consistency.
