Food Nanny Kamut Hot Cross Buns

Ingredients

½ cup golden raisins (or any kind or dried fruit), soak them in ½ cup boiling hot water while you mix the other ingredients
- 1 cup warm milk
- 1 Tablespoon active dry yeast

½ cup granulated sugar

¼ cup butter, melted
- 1 teaspoon Food Nanny Sea Salt
- 3 cups White Kamut Flour
- ¼ cup Whole Wheat Kamut Flour

¼ tsp cinnamon
-
1/8 tsp nutmeg
- 2 large eggs, beaten
-
½ cup powdered sugar mixed
- ½ teaspoon Food Nanny Vanilla

2–3 tsp milk or heavy cream (want it thick so you can pipe in the crosses to the rolls
For the Glaze
Directions
1. In a small bowl, combine ½ cup raisins with ½ cup boiling water. Let sit while you mix the other roll ingredients and then drain.
2. In a microwave save bowl, measure in 1 cup warm milk with butter and heat until butter is just melted. If too hot, let sit until milk and butter are warm but not hot. Add in sugar and sprinkle 1 Tablespoon yeast over the top. Stir and let sit until bubbly.
3. In a large mixing bowl or in your KitchenAid mixer fitted w a dough hook, combine the white Kamut flour, whole wheat kamut flour, Food Nanny Sea Salt, cinnamon & nutmeg. Stir until evenly combined.
4. Next crack 2 eggs into a small dish and whisk. Add this to the flour mixture and then add in the yeast/butter/milk mixture. Mix with a Food Nanny Dough Hook.
5. Add the drained raisins and mix. Then pour dough onto a floured surface and knead to bring dough together and continue kneading until dough is smooth and lightly tacky to the touch.
6. Return dough to a greased bowl, cover and allow to rise in a warm place for 1 hour or until doubled in size.
7. Turn dough out onto a lightly floured counter and cut into 12 equal sized pieces. Roll dough into balls with the palm of your hand and then transfer to 2 buttered Food Nanny Pie Plates or a buttered 9x13" baking pan. Cover and let them rise again in a warm place for 30 min until risen rolled will NOT quite double in size.
8. While rolls rise, preheat oven to 350 degrees. You can brush the tops with an egg wash (1 egg whisked together with 2 Tablespoons water) for darkertops if you’d like and then bake for 15-20 minutes or until tops are just golden brown. Remove from the oven and let cool in the pan.
9. Once buns are warm but no longer hot, stir together the ½ cup powdered sugar, ½ teaspoon Food Nanny Vanilla and about 2–3 tsp of milk. You can add more powdered sugar to thicken it up or more milk to thin it out. You want glaze thick enough to pipe.
10. Transfer glaze to a ziploc bag, cut off the tip of the bag and pipe a cross shape over each of the buns. Serve warm or at room temperature. ENJOY!!
