Have you ever tried Lavender Cookies?! Our good friend made us fall in love with them! They are definitely not your normal cookie…but they are so delicious! You need to make sure to try, it’s something fun and different! Go drop some off to your kids’ teacher, friend or neighbor! xo Liz + Lizi
Beat butter for about 2 minutes (until light and fluffy) with a hand-held or electric mixer.
Add 2 cups of sugar and beat for another minute.
Add eggs one at a time, beating well after each egg. Add in vanilla.
In a medium bowl, whisk flour, baking soda and 1 Tablespoon lavender. Add this, a cup at a time, into wet ingredients. Mix until combined.
In a small bowl, combine 1 cup sugar and lavender to taste. Set aside.
Get a heaping tablespoon of dough and roll into a ball. Roll into the sugar lavender mixture and place on a cookie sheet with parchment paper.
Measure 2 Tablespoons of dough and roll into a ball. Roll into sugar and lavender mixture and place on baking sheet covered with brown parchment paper.
Bake at 350° for 7 minutes. Give cookies a minute to set before moving them to a cooling rack. Sprinkle with a little more lavender sugar mixture if desired.

You have not tasted anything like these cookies. They have a very nice flavor. Perfect cookies for a lunch or
special brunch.
TIP: Edible lavender can be found on Amazon if you cannot find any at your local grocery store.
