½ cup butter (soft)

1 ¼ cup sugar

1 ½ tsp vanilla

1 egg

1 cup Kamut white flour

½ cup cocoa powder

½ tsp baking soda

¼ tsp French gray salt

¼ cup sourdough discard (optional)

½ cup butter (very soft)

1 tsp mint extract
-
½ tsp vanilla

Green food coloring
-
1 ½ - 2 cups powdered sugar

1 cup chocolate chips
-
1 Tbsp butter

Directions
Cream the butter and granulated sugar until smooth.
Add the vanilla and egg and beat until combined.
Add the Kamut flour, cocoa powder, baking soda, and salt, and mix until a dough forms.
Bake cookie dough balls into cookies at 350 degrees for 8-10 minutes, then let them cool.
Make green frosting, then top the cookies with an even layer. Let them chill in the freezer.
Make the chocolate ganache by melting chocolate chips and butter together. Spoon it over frozen cookies. Serve or leave at room temperature to thaw completely.
